Shrimp Creole

It is late. Too late to think of anything other than a good meal.
I will go home for an early and long weekend and will try this
recipe. It looks tempting, easy and almost 'khaleeji'.






Serves 6
1/4 c celery, chopped
1/2 c onion, chopped
1/2 c green pepper, chopped
1/2 lb mushrooms, sliced
1/4 c butter and olive oil total
32 oz canned tomatoes (Jaddwilliam will use fresh ones)
1 bay leaf, crumbled
1/2 tsp tarragon
2 tsp salt
1 clove garlic
1 tbs sugar
1/4 tsp Tabasco
3 lbs 16/20 shrimp

Saute vegetables in butter until tender.
Add tomatoes and seasonings; simmer 20 minutes.
Add shrimp when ready to serve heat thoroughly.
Serve over rice.
